
Egg Breakfast Hacks
Egg on Baguette 🥖🥚
Specifically, slices of boiled egg on slices of sourdough baguette.
This morning, Shruti (my wife) asked me how many eggs I wanted for breakfast (I wanted two). As a speciality, she sprinkles a concoction of spices — salt, pepper, red chili or cayenne powder, and chaat masala — on slices of hardboiled eggs. It leaves me licking my lips, fingers, and sometimes even the bowl — and no, I am not ashamed to admit it. I mean, look at this delicacy 🤤

Regardless, a stray thought entered my mind as the eggs were boiling (it takes 10 minutes for the eggs to boil, I was told to state in this story).

What if … I had the slices of egg on slices of baguettes? We usually reserve these slices of sourdough baguettes for bruschetta (again something that Shruti excels at preparing).

Anyhow … once an idea as simple as “egg on baguette” germinates my mind, it can only lead to one thing: slices of baguette, ready to be min-plates for sliced, spiced, boiled eggs. So, once Shruti handed me a bowl of spiced eggs, I went to work.
After I sliced up the baguette, I microwaved the bread (for 30 seconds) to soften it up a bit. Otherwise, my tongue and teeth end up wrestling with the sourdough bread, and it is all very painful. And then I just laid those lovely slices of spiced egg on the softened sourdough bread:


If I say so myself, they look scrumptious…


Of course, I had the whole thing with a healthy dose of espressos ☕️☕️☕️
